favorites for using Urbani Products , as well as sophisticated
recipes from two of the finest ‘Truffle Chefs’ in
the world, our own Christian and Peter Urbani. |

Norcia Crostini
with Black Urbani Truffles
Serves 6 - 8 |
 |
slender slices of bread
2 oz. Urbani Black Truffle
Pieces or Breakings
4 tablespoons extra virgin oil
4 cloves sliced garlic
½ oz. anchovies
1 oz. chicken livers
1 tablespoon capers
½ teaspoon lemon juice
salt & pepper to taste
1. Puree Black Truffle Pieces or Breakings.
2. Add boned anchovies, garlic, and pureed truffles to warm oil. Render
till smooth.
3. Add the diced browned livers to the mixture followed by the capers.
4. Splash lightly with lemon juice. Mix till the consistently of a smooth
spread.
5. Add salt and pepper to taste.
6. Apply to crostini and serve.

Urbani Truffled
Vinaigrette & Green Salad
Serves 6 – 8 |

3 tablespoons champagne vinegar
1 ½ cups fresh orange juice
1 teaspoon Urbani White Truffle Puree
a few drops of Urbani White Truffle Oil
1 tablespoon olive oil
2 cloves minced garlic
a few sprigs thyme
salt & white pepper to taste
Choice of baby salad greens
1. Micro dice garlic and thyme.
2. Combine all ingredients in a large metal bowl.
3. Drizzle over salad of baby greens and serve.

Black Truffle
Sea Scallop Ceviche by the Chefs Urbani
Serves 6 – 8 |

5 tablespoons
Urbani Extra Grade Truffle Juice
1 oz. Urbani Black Truffle Pieces
a few sprigs cilantro
½ bunch chives
fine lemon zest
½ oz. total combined { fine orange zest
fine grapefruit zest
½ teaspoon tai chili
sea salt to taste
1 oz. lime juice
1 oz. orange juice
1 oz. grapefruit juice
12 – 16 diver sea scallops
1. Marinade diver sea scallops in lime, orange, grapefruit and truffle
juice.
2. Mix into the marinade and scallop the three zests, tai chili, chives
and cilantro.
3. Finish with Truffle Pieces to order and salt to taste.

Wild Mushroom
Risotto with Urbani Porcini Cream and Summer Truffles
Serves 6 – 8 |
 |
1 pound of uncooked Arborio rice
approximately 1 quart chicken stock
2 tablespoons Urbani Porcini Cream
2 oz. Urbani Frozen or Preserved Whole Summer Truffles
several leaves and sprigs basil
several leaves and sprigs parsley
1 oz. fine dice tomato
2 tablespoons extra virgin olive oil
1 teaspoon Urbani Black Truffle Oil
4 – 6 cloves fine diced garlic
1 fine diced shallot
salt and fresh black pepper to taste
1. Sauté’ shallot in olive oil.
2. Add garlic and Arborio rice to shallot and toss to coat rice with
oil.
3. Lower heat and begin to add chicken stock slowly, adding a few ounces
at a time mixing with a wooden spoon.
4. Continue cooking, mixing occasionally until rice is “l dente” which
is slightly firm, or literally “to the tooth”.
5. Add Summer Truffles and Porcini Cream. Salt and pepper to taste.
6. Finish with herbs and tomato and serve.

Urbani Truffled
Marinade for Pork Tenderloin
Serves 6 – 8 |
 |
1 cleaned and trimmed pork tenderloin
1 fine diced shallot
6 cloves fine diced garlic
2 tablespoons lemon juice
1 oz. champagne
1 oz. Urbani Extra Grade Black Truffle Juice
salt and fresh ground pepper to taste
1. Place pork tenderloin in vacuum seal bag.
2. Make the marinade by combining shallot, garlic, lemon juice, champagne,
truffle juice and salt and pepper.
3. Vacuum seal the bag which will completely surround the meat with the
flavorful marinade. You will find that this method greatly reduces waste.
4. Remove meat after 1 hour and cook as usual basting occasionally with
marinade.

Strawberries
Con Urbani Tartufi
Serves 8 |
 |
1 part heavy cream
1 part sugar
1 part egg yolk
1 teaspoon Urbani White Truffle Oil
30 g. jar of Urbani Truffle Honey
8 large strawberries
salt and fine white pepper to taste
1. Wash and clean strawberries, removing stems and set aside.
2. In a double boiler, mix one part egg, one part sugar, and one part
heavy cream. Add salt and pepper to taste and cook until creamy.
3. Remove from heat, add White Truffle Oil and chill.
4. Spoon chilled sauce onto serving piece.
5. Place fruit in chilled sauce and drizzle lightly with Truffle Honey.

Butter on your steak or chop just before
serving.
Urbani White Truffle Butter melted
for dipping your lobster and crab.

Butter on any chicken or fish dish after
cooking.

| Easy Truffle Meat
Marinade |

| Marinade any meat in a ziplock bag with
a few tablespoons of Urbani Truffle
Juice. The flavor of your meat will be enhanced
and your meal a sure success. |

| Bruschetta with
Truffles |
 |
| Spread bruschetta with warmed Urbani
Summer Truffle Pasteurized Sauce. We also refer
to this product as Truffle Salsa. But no matter what
you called it, its works great in this simple but
impressive appetizer. |

| Truffled Hamburger |
 |
| When making your hamburger patty, simply
add a teaspoon of Urbani Truffled
Cheese Fondue to the middle of the burger. To
do this, flatten the meat, place Fondue in the middle
and then fold the sides up and over. Be sure to seal
well. Cook as you usually would. You will find that
the burger is wonderfully infused with the flavor of
the Truffled Cheese Fondue. You’ll never go back
to plain burgers again! |

Truffle Honey over your favorite flavor of
ice cream. We prefer vanilla, coffee or strawberry,
but let your palate decide. For an extra special dessert,
sprinkle with chopped hazelnuts. |
